I don't see Jack/Gwen chemistry. I don't see Jack/Ianto either. I hardly ever see chemistry, at all. The two pairings I ever saw it in was Gwen/Owen in Countrycide, and Jack/Jack in Captain Jack Harkness.
Otherwise? I see affection, I see caring. I don't see smoking hot UST. I don't tend to see the subtext either. I can sometimes see the points where the script and action is set up where the conversation that they're having isn't really the conversation that they're having, but it's difficult. Though watching it five times and having someone point it out - like the date scene in Kiss Kiss, Bang Bang. That one was a gimme as I've read actor interviews that more or less said "look at this scene!"
So, if I don't mention that I saw X or Y, that's why. It's probably why one of my favorite things in Torchwood is Jack's airplane cuff links. = )
